I love them! You pretty much do with them whatever you'd do with either courgette or summer squash - boil, steam, fry, sautee, etc. Or you can stuff them. Or make soup. The marrow possibilities are limitless! :)

It's an unfortunately named vegetable. I can't help thinking of bone marrow when I see them and... ick.
I think it's destined for bread or muffins. It came in my veg box - I did not voluntarily purchase it! ;)
